Coffee cake - instant coffee ok?

I'm baking a coffee cake this week and the recipie lists '1tsp espresso coffee powder, disolved in 1 tbsp boiling water'.

Does anyone know if instant coffee would be ok to use? I don't want to buy espresso powder just for the sake of 1tsp!

I always use freshly brewed espresso as someone bought me an espresso machine for Christmas a few years back. I'd say instant coffee would be fine, but make it REALLY strong, I'd advise at least doubling the measure.

I used to find it really strange in America when you went to a Starbucks and ordered a piece of coffee cake. It had no coffee flavour. It's just a normal cake but they call it coffee cake just because you eat it with coffee.

instant coffees fine to use!

Thanks everyone, i will double the measurement and use instant. Might as well keep the costs down if it tastes more or less the same.

Instant is fine, just make a really strong mixture of instant granules/powder and water. Once it has been baked in the cake you won't be able to tell whether instant or ground coffee had been used.
