Unfortunately, this practise is very common in the F&B industry. Including those individuals who prefer cash in hand so as not to affect their benefits allowance.

I expect Susan has already sorted things, by incorporating her company recently. However an employer should keep records and submit them to HMRC - you can't rely on someones word they have earnt under the threshold.
