Palm Sugar

I have had a tub of palm sugar for a while now, and it seems to have turned into a syrup consistency.
The sugar is in a sealed plastic pouch inside a plastic tub.
Is it still okay to use ?

i dont think sugar really goes off its a preservative after all like salt but how long after the use by date is it? a few months i wouldnt worry but a few years id chuck it.

"Sell by date = MAY 2010"

I suppose I'd better chuck it out eh ?

next time just freeze it if you have left overs that way it does last years pretty much, i freeze loads of stuff but then again i can be a cheap bastard

Don't you find this is the case with all these 'special' ingredients? I love Thai/Mexican/Chinese etc but quite often you need one tablespoon of a certain ingredient and then never find the need for it for months by which time it's gone off, this type of ingredient is usually expensive too!
