prawn cakes
hi all, first time posting so please be gentle
. i know i could google a recipe but wondered if any one has a tried and tested? many thanks x

Do you mean a fishcake - so mixed with mashed potato or like a fritter?

Prawn risotto cakes are nice. Make up a standard risotto, then at the last minute throw in some prawns, peas and fresh coriander. Let this mixture cool before making into small patties. Coat in flour, egg and breadcrumbs (Panko are best) then shallow fry until golden on both sides and serve hot with lemon wedges to squeeze over.
This recipe works well with any leftover risotto of any flavour. You could also make Arancini by putting a lump of mozzarella in some mixture, rolling it into a ball, flour, egg and crumb then deep fry intil golden. Hope that helps!
