would it be possible to put a couple of breasts in a tray with water in the oven? and if so, how much water would you recommend?
the breasts go dry after about 12 minutes in my oven! i heard this water method should help, though im not sure..

May as well just poach them in a pan on top of the stove.

Or wrap them in foil and steam them.

Or even the microwave. I would recommend braising them though. Put the breasts in a dish and half fill with stock or wine, herbs and spices and cook in the oven. You can cover if you want if you have problems with them drying out.

The foil is also a good method.

now that sounds like a plan. i might whack them in some chicken stock. how much water though? do the breasts need to be completely covered? and would i need to put foil over the dish or tray aswell?

I usually put stock/liquid half way up the breasts. You can turn the breasts half way through cooking. The foil is optional.
