Using dried herbs

A quick question about dried herbs...

I'm making a pea & mint soup tonight and will be using dried mint - when is best to add it, at the beginning or end of cooking?

TIA

I usually add dried herbs nearer to the beginning so they have a chance to hydrate and release their flavour. Only add at the end when I sprinkle Oregano on a pizza!

Thanks farmhand, I shall follow your advice.

Be careful with the quantity - dried herbs have a much more pungent taste than fresh ones, so don't put in too much.

In at the beginning as dried is dried. Mind you mint has to be one of the most easiest plants to grow. Some turned up in my garden and is still there 10 years later.

At the beginning and be careful as they can be a lot stronger then fresh herbs.

Thanks all.

Yeah I read somewhere that you should use a third of what you'd use if they were fresh so I'll use them sparingly to start.
