'Batch' meals

I am going back to work next week after 8 months off and as a cost cutting exercise I would like to cook and freeze batches of meals to use for my lunches but I am a bit stumped for ideas. So far I have come up with: shepherds/cottage pie, minced beef mix (to use with pasta/potatoes etc), stews/casseroles (I don't like soup), chilli etc. What else is there? - I am sure there are loads more but my mind's gone blank!

I am well known for cooking too much. I then make portions for the freezer with most leftovers. Any meat or fish with vegetables (except salads), gravy and either rice, pasta, quinoa, potatoes (they are better when mashed).
My OH takes one out of the freezer in the morning to take with him to work.

I always batch chicken and chorizo and always do 2 lasagnas. One for the freezer which I portion out before freezing. Curries do well frozen.

Other things are just the usual like you have said, stew, mince, bolognese etc

practically anything. I even cook a bit more than i need to things like stuffed chicken breasts.

I got so fed up of the same sandwiches every day a couple of years ago, i decided to revolutionise my lunches. Every lunch is different now, and stuff can keep for over a month in the freezer so i dont even remember sometimes what food is.

I even found a fish pie the other day.

You dont need carbs with it either (rice etc). I had a homemade curry left over with a couple of left over slices of homemade bread. Popped them in the toaster, curry in microwave, top cheap homemade lunch in 4 mins

OP, google OAMC (once a month cooking). There are plenty of website with excellent information and what to avoid.

Personally I cook in portion of around 10 to 15 at a time. I have the following in the freezer at the moment
- Beef bolognese
- Sausage casserole
- Ham hotpot
- Chicken curry (indian style)
- Red thai curry
- Meat loaf

I avoid fish to be fair to the other people in the office. I don't have any carbs with the meals, no rice, pasta, bread or anything (I lost 12kg in 3 months since reducing carbs). I add at least 1/2 of dish as veggies and fill up with lentils or beans, much healthier and cheaper.

Of course. I was thinking disjointed. I dont often have carbs with many of my lunches. That toast doesn't frequent my desk much. It was a nice exception.

Forgot to ask, do you have a microwave at work ? In which case then stick to the plastic containers. You can pick up 4 pack or 5 pack for a quid at pound shop I think. You should be able to reuse a few times at least.

I take my lunch out of the freezer the night before and then leave on counter top. Its defrosted by the time I leave in the morning and room temp by lunchtime. Pop into microwave for around a minute or 90 secs, job done.
