pork belly slices
Any ideas what i can do with these?
Thinking of having them tomorrow night? Thanks

One of my favourite recipes is from The Good Housekeeping Cookery Book (the page automatically opens to this recipe, I've made it so often!
Slice 2 large onions Peel, core and thickly slice 1 or 2 cooking apples layer then put slices of belly pork on top (depends how large they are) salt & pepper then pour over 1/2 pint stock (veg or meat) Bung in a 170 degree oven for 1 1/2 hours Skim then add a little flour slaked with water and stir. Put it back in the oven for about an hour. The pork will have browned on top and the mush underneath is a lovely sauce. Serve with mash and maybe carrots & peas. Enjoy. |

I make a marinade for them of
3tbsp ketchup 1tbsp BBQ sauce 1tbsp west Indian hot pepper sauce 1tbsp maple syrup 1tbsp olive oil 1tbsp soy sauce 1tbsp white wine vinegar 1 clove garlic grated Sometimes I replace the BBQ, hot pepper and garlic for 2tbsp sweet chilli sauce. They're really good done on the BBQ, when the edges catch

^ I did similar to above the other week. A simple bbq sauce (mostly consisting of Budweiser BBQ sauce). Cooked slowly in the oven and then finished on the BBQ.
The best i've done with them though was a mexican type stew with chorizo, smoked ancho chilli, garlic, onions, peppers, smoked paprika and tomatoes. It was very fatty and probably not very healthy but it was delish! |

I like to make a few holes with a skewer, pour boiling water over it, dry it, give it a dry rub of Five spice, smoked paprika and salt the leave it for an hour or so.
Then roast in a hot oven for the first ten mins then turn it down. When cooked, cover in a mixture of Thai chilli oil (the one with shrimp paste) soy and vinegar. Serve with sushi rice with coriander and sesame seeds. |
