Oven Drying Tomatoes
Any tips on drying tomatoes in the oven. I'm going for that sun-dried feel but I'm reading conflicting advice on how long to leave them in for.
Has anybody done it? |

I've done it Teddy. I use the elogated fleshy plum tomatoes (Roma?). I cut them in half lengthways and put them on a tray in the oven cut side up. I sprinkle a little salt, olive oil and balsamic over them and leave to cook in a low oven for 6-9 hours in a very low oven (the lowest it can go). Check after about 5 hours, you want them dry and bendy but not brittle, the time depends on the size of them. I store in sterilized kilner jars packed in and topped up with olive oil. Great to use in the winter!

Great, thanks for that. Six hours! Have a half day today so I'm doing them this afternoon. The allotment is in overdrive right now.
