Pubs & Homemade/Frozen Food

I had a meal at The Duke William pub in Matlock last week whilst down in Derbyshire and they served possibly the nicest homemade chips I have ever eaten, lots of flavour, slightly crispy skin, everybody in the pub seemed to agree as well. Yet I'd been to a couple of other places which served homemade chips and they didn't seem to have that much flavour. What's the secret?

Also is it just me or do A LOT of pubs seem to serve the same frozen food as each other, I've been to 2 pubs where I both ordered sausage and chips and they were exactly the same.

I think you're lucky to get pubs cooking their own chips. Around here only a select few cook make their own from scratch.

As to the quality, they maybe cooked in dripping (or even duck fat) instead of just regular oil.



Chian pubs are likely to buy meals/ingredients and it's possible they're buying from the same suppliers.
If it's Wetherspoons/Lloyds then they're the same chain so will get identical meals (but they use frozen chips).

Double or even triple cooked might be the answer.

As for pub meals, most is microwaved, I always try hard to pick the stuff they have to cook, i.e. steaks.

They buy ready-cooked frozen meals from companies which specialise in that very commodity.

Nicest chips I have had are at the Rising Sun in Audley, near Stoke. Was years back though, but they were lovely

Firstly I must say I'm not a great lover of chips but when you get good ones they are the best thing. Sometimes homemade does not translate into good!

They may not be great but surely it's better than oven chips. I'm always dissapointed when I go to a pub/restaurant and they don't do homemade chips/roasties.

I went to a gastropub recently and I swear the roasties were Aunt Bessies

Depends on what type of pubs you go to, Pubs where I go for lunch/dinner would not survive very long if they did frozen microwave meals. The competition is very high now that pubs are closing all over the place.

I cant remember our local pub, when the previous owners lost all interest with the place, that they used to go to Macro and stock up on frozen lamb shanks and prawns in filo pastry and pizza etc ... Everything they served came from a packet out of the freezer.

I'm lucky as I live close to several gastro pubs that cook their own food. My local, which is 90 seconds away, serves Thai to die for which is all cooked to order by a wonderful Thai couple.. Gosh I could eat their Pad Thai now

In fact I could reel off a list of pubs within walking distance from me that serve amazing food (ranging from a few super expensive gastro pubs to bars that just have a wood fire oven and specialise in pizza's)

One thing I love about where I live is the good Eateries

That said I also live near by several chain pubs that serve tepid, generic food....

I live fairly rural and it would be the kiss of death to not serve high quality food.

That's the difference really. In small provincial towns nearly all the pubs are run by the same few companies so they all produce very similar menus.

Really? Things will be kept warm at lots of places, but never heard of them leaving them in an oven.

At my local Wetherspoons the food is awful. My favourite in Bolton is Blundell Arms but the best chips I ever had was at a pub in Winchester called The Bishop on the Bridge where their twice cooked chips were the best chips I have ever tasted.

I would have thought that most places that make their own chips would double fry them. It just makes sense as you have them pre-cooked and ready to flash fry to order.
