Horseradish Root

Hello,

Today in Morrison's I found fresh Horseradish Root. I have grated a big lump and its steeping in milk now for some mash later, but I am wondering what to do with the rest.

I have read that you can freeze it- but would it be best to grate it first? I'm thinking yes, but I don't want to ruin it as its so rare to find.

I haven't used fresh horseradish root myself but this site says you can freeze it grated, but not to freeze the root whole: http://homecooking.about.com/od/food...radishstor.htm

i have no idea and am grateful to anyone that would point me in the right direction (so thanks 'shouldbelucy')
I'm growing some for the first time and I'll have to browse the internet for more info on when to harvest.

Thanks for the advice.

I used it last night and it was horrible, bitter and woody, so I chucked the lot I think it might be the root I had. Having done some reading you are meant to choose roots that aren't green, mine was very green, bad times.

Really disappointed though, I love horseradish and I am cooking beef wellington next week so though Horseradish mash would be a good accompaniment to it... think I'll stick with champ.

LaChatteGitane- good luck growing it- I might be getting a square of a friends allotment to play with and its one of things I would like to try.

If I see it again I might give it another go.
