Left over boiled rice and some diced chicken breasts and made a yummy mushroom risotto.

Anyone else tried it? its nice

I've noticed a lot of american recipes use tinned mushroom soup but, although it's a quick fix, it's so easy and cheap to make your own. I made about 6 generous portions last week for less than £2 and it's lovely. I've used some and the rest is in the freezer.

OP, that sounds quite nice, might have to try that one.

Earthling, have you got a tried and tested recipe for mushrom soup? I tried to make it once but the result was very average indeed!

I only made it this week because Aldi had 600gm of closed cup mushrooms for £1. I already had some chestnut mushrooms and a few dried shitaki and porcini mushrooms at home. I fried off a couple of chopped shallots, some garlic and a leek then l added the chopped mushrooms. After about 5 mins I added a bay leaf, a little milk, chicken and veg stock (at least 1.5 litres) and let it simmer for about 25 minutes. Then I removed the bay, seasoned it and added some cream. Finally, I blended it to to consistency I like.

Under pretentious fancy menus where any creamy rice dish is a risotto, any stacked food is a mille-feuille and any gravy is a jus
