Making curry paste
I had a bit of a senior moment today and bought two bags of chillies from two different supermarkets having forgotten that I'd already bought one
So i've got all these chillis I also bought root ginger and i invariably end up chucking most of that away after a couple of weeks So..........I thought I might make some curry paste by chopping up chillis, root ginger and garlic, sticking it in a little jar with some curry powder and covering with oil.........it's a Thai Curry Paste Jar that i've washed out and has quite a good lid Would this last for weeks or would the fresh ingredients start to go off ? I'll keep it in the fridge ! |

I make this fresh chilli sauce and it keeps in the fridge for a week no probs.

cheers...........I hadn't thought of cooking the ingredients before putting in the jar !
I'll give 'em a bit of a frying with a tomato or two ! that should help infuse the flavours into the oil as well........

I've made smaller portions of the recipe and just nuked it in the microwave for a couple of minutes and it's been just as good.
