Vinegar advise

Hello,

So anyway, I've made some tomato chutney recently, my usual recipe but with a different type of red wine vinegar than normal which is frankly not far away from malt in flavour. I know I know, you get what you pay for but we all make mistakes.

The batch is fine on first taste but after a few seconds you get a very stong vinegary aftertaste. I was wondering if there is anything I can do to rescue it or should I chalk it up to experience?

Could you add more sugar to counteract it?

Will it make it too sweet if I do? It's a good thought though.

What about if i added more of everything else except the vinegar?

If you're still in the process of making it or combining batches then that could work.
