malt loaf
Has anyone ever baked a malt loaf that came out proper squidgy and heavy like a Soreen one? I've found a ton of recipes on the internet and tried a few, but they always come out like a light cake rather than good heavy malt loaf.

I've put this recipe up before but I can't find it - anyway, it's a Mary Berry's recipe, and I've made it a few times. It's not dark in colour, but maybe using dark brown soft sugar would give that. It does have that chewy texture of Soreen though.
175g / 6ozs SR flour 2 tablespoons Ovaltine 25g / 1 oz caster sugar 75g / 3ozs mixed dried fruit 2 level tablespoons golden syrup 200ml milk Just mix everything together to make a thick batter, and scrape it into a 1lb loaf tin, that's been well greased. Bake at 160 / Gas 3 for about 1¼ hours until cooked through. Turn out and leave to cool on a wire rack. Served sliced with butter. |

Thanks SeasideLady. I can see the logic of the Ovaltine. It contains malt and whey, both of which are in Soreen list of agreements.I can't actually get Ovaltine out here in the Czech Republic, but I can generally put things together from their individual ingredients. I have to make my own golden syrup too. It's surprisingly easy.

That sounds rather splendid, SeasideLady.
I can see I'm going to have to give that a whirl. Thanks for sharing. As for making it darker, maybe you could change the golden syrup for treacle. I might have to experiment.

I put this on another thread, thought it might be handy here. Not a malt loaf but a lovely tea cake,
It's like a fruit loaf with Weetabix. Crush 2 Weetabix biscuits Add 3/4 cup of sugar 1 cup of milk 1 cup of raisins Let that sit overnight (although I let mine sit for 4 hrs this morning) Then add 1 cup of self raising flour 1 egg In the past I have also included cinnamon, today I added dried coconut, this is all optional. Bake for 1 hr in a loaf tin. Let it cool, served sliced with butter or just as it is. Here's the picture also http://a6.sphotos.ak.fbcdn.net/hphot...09214121_n.jpg I made it yesterday. |
