Fish and Chip Shops

Batter on the fish is make or break, if its crisp it will make a delicious meal.
So many fish and chip shops dont seem to get this....
If they get the batter right, everything else will follow !

Chips too, if they cut the chips, washed them in cold water, dried them.... the results would be better.

There is so much they could do to improve but they dont seem to give a monkey !

Who needs chip shops when you've got a deep fat fryer, some Haddock and mushy Peas in the freezer and a bag of Maris Piper Potatoes in the cupbord.

The batter at our chippie is fine but the chips are a bit hit and miss

If the chips look iffy, I go for a scollop instead

As Rossall said, I would much rather do my own. The chippies near me do gross fish! I got a portion the other day, the fish was completely soggy and dripping in oil! Yuck!

Never had a deep fat fryer, and dont have the space in the kitchen for one.

The food processor and bread maker get regulary used though, and have precedence.

Orange chips are the way forward. I wouldn't dream of cooking fish & chips at home, surely the whole point of a chip shop tea is when you don't want to cook?

Ever considered opening a fish and chip shop OP? You'd make a killing.

Whenever I go in them for fish and chips, I seem to be the only one buying fish anyway. Everyone invariably wants hideous things like sausages and pies.

There are three chippies that I regularly go to and they are all different and I choose them depending on my mood.

One does regular sized portions with crisp batter and thick cut dry chips.
One does smaller portions with a decent enough batter (but the worst out of the three contenders) and thinner chips
The other does massive portions with greasy chips. It's the best of the chippies but is furthest away.


Sometimes you just want some nice greasy chips and a good finger licking

I normally go for kebab meat & chips these days, but can't beat a fish special with mushy peas.

I find the Chippies in QLD to be generally excellent Some combo of - Flake, Spanish Mackerel, Sea Scallops & Chips = yummy

Moreton Bay Bugs too, drools

For good fish and chips you need the oil at the right temperature.
Also you need to shake bang and hang the basket to get rid of
the excess oil.

120c for the first chip frying - 10 mins

150c for the Fishy - 8 mins

180c to finish off the chips - 2 mins

That's cos fish is so expensive. £4.70 here or £5.20 for a large one.

They fry them freshly for you, do they?

Round here there used to be loads of good chippies, but there aren't many now. Most are run by foreigners who can't cook English stuff very well.

I live near the supposedly excellent Cottage chippy but it isn't as good as it is cracked up to be.

My local one does fairly good battered haddock but the chips are lousy. You get about 500 of the things but only about ten of them are edible.

I'll have to try that tip from earlier post about getting a scallop instead.

We call them orange chips but I presume you mean the battered ones? Can't get enough of them.
