Fish batter
If you cook fish n chips at home what is your batter recipe?
I like to vary it and today added a beaten egg to the usual flour & water and a splash of vinegar. It was a bit too bready though so I don't think i'll add egg again. |

I only had cans of fosters in the fridge so didn't want to use that for the batter today.

I tend to add fizzy water it just makes it a bit lighter and crispier than lager/beer i find

I don't cook fish, but I do make "slices" (aka Scollops, smacks etc.), and pineapple fritters, for which I use a flour and water batter.

I always make home made fish or roe & chips, was getting sick of soggy batter from chip shop.
The perfect batter recipe every time. Thanks to Hugh Fearnley-Whittingstall 8oz plain flour Nearly a pint of Black Sheep ale 2 tbsp groundnut oil (or oil of choice) Salt & pepper Mix altogether, allow to rest for an hour. |

I understand it's one of those odd quirks in life that powdered batter actually makes better batter than fresh. Or at least use powdered egg, if you can get it - fresh egg has too much water in it.

i put in 10% cornflour and a splash of vinegar. i may try putting in some oil!
