Baking cakes, buns and fairy cakes

I have a newish oven, and was wondering what shelve in the oven to put the cakes on...? I like mine to be spongy and light, not hard and crispy .. My old oven baked cakes, buns etc very nice, but new oven i havent really experienced enough, and always put the cakes on the middle shelve..On the very top shelve in the oven they tend to be ''burnt'' ontop, and go dry quite quick..Any ideas, cos i have some eggs to use up , and was gonna make some fairy cakes ..i just do about 4 or 5 so maybe thats why they go dry

It depends whether it's gas or electric. My old oven was gas and I always found the middle shelf to be best for cakes.

If it's electric fan assisted it doesn't really matter, but I still always put them on the middle shelf at a lower heat.

Good luck James put some pics up when they're done!

I tend to go for the middle shelf for cakes but if I'm doing 2 trays and one is bottom and one top they still seem to come out the same

i have just baked some chocolate chip fairy cakes and this is the recipe..I just made a small amount of the ingreidents

50g plain flour
50g marg/butter
50g caster sugar
pinch of salt
i egg
teaspoon vanilla essence
teaspoon bicarb of soda
teaspoon of baking powder
1 heaped spoon of cocoa
and some chocolate chips

oven 180 degrees
1..seive flour,bicarb soda, salt, baking powder, cocoa all in the bowl,,

2..in another bowl cream together the marg ( butter) and sugar..Add the egg, and mix with whisk

3..Add to the dry ingriedents and fold in together,, or use a whisk

4..add the chococlate chips and the divide into the cake cases..

5..bung in the hot oven for about 10 to 15 minutes..( on the middle shelve lol)

6..leave to cool or go cold, then ice them and decorate..

( i will post a piccy later, as there still hot, waiting for them to go cold and then i will chocolate ice them with some sweets ontop..I can't wait )
