From a network perspective the post-Super Bowl slot is usually about maximising advertising revenue rather than launching a new show. The Super Bowl represents a massive payday for the networks (NBC has 30 sold spots during the game at a record breaking $3.5 million) and they like to keep the good times rolling across the entire night. New untested shows don't tend to do that.

Undercover Boss had about a million more viewers than Grey's Anatomy.
NBC's decision to air The Voice is a good one though. Firstly its good for their bottom line - The Voice will command much higher ad rates than anything else they have on their schedule. Secondly they're hopeful that a Super Bowl lead-in can help boost the show up to Idol like levels for season two. Thirdly the second audition show will air the following night which keeps the momentum rolling and provides a strong boost for Smash debuting right after it. And finally reality tends to do pretty well in the slot - Undercover Boss did 38 million in 2010, Survivor: All Stars did 33 million in '04 and the second season of Survivor did 45 million in '01. They should be in for a good night particularly if they can get the show on air before 10:15.
