The best breadmaker recipe thread

Now that we are getting settled in our new home, and the weather is heading toward the cooler end of things, it occurred to me this morning that I haven't used my breadmaker for ages - as it is sat forlornly in the corner of the kitchen, I thought it time to get it going in earnest, but apart from the recipes that came with it, I have very little to try with it.

I know that many fellow DS'ers have breadmakers, and I am pretty sure that some of you will have some really good recipes in your armoury, so I thought I would start a thread where they could be shared (and I can nick them, and try them out )

Apart from mixes I always make simple bread.
Its also rare that I buy bread when something fresher is always at hand.

I now only use the breadmaker to mix, knead and let the bread rise.

Essentially chuck in some flour (strong flour is best, self raising a no-no)
Set the yeast off with a bit of warm water and sugar untill it starts frothing
Add enough liquid (with the frothy yeast) as appropriate to the type of flour (wholemeal needs a bit more than white) - use the amount on a packet of breadmix as a guide
A big pinch of salt
Set the breadmaker to dough
When it's done (90 minutes???), take it out, knock it back, leave to warm for 30 minutes, then bake until the base sounds hollow.

I now anticipate lots of people disagreeing with me!

I love to use my breadmaker for just dough now. I make
* pizza dough
* hotdog/bap dough
* french stick dough
* hot cross bun dough

All very lovely. I can post the ingredients if anyone needs one.

I've made

tomato bread
chocolate bread
nutty bread
plain bread

tomato bread was my favourite.

I got a new one today as my old one broke. I am cooking tomato and herb bread.

Big fan of mine to make complete loaves or dough for rolls or pizza. Love love love it.

My loaves rise and then sink at the top. Whether I use a mix or make my own.

I never open the machine once its set off but every one of them does it

Bread still tastes fine but doesn't look that great.

I've made some lovely rolls for the children's packed lunches. They're like the little dinner rolls you get in Bird's bakers( Birds is an East Midlands bakery chain), made with milk egg and butter and glazed with beaten egg before baking.

I recommend this book, I have a machine that has wet ingredients in first and everything i've tried from this book has worked.

I don't eat a lot of bread, so it wouldn't really be financially viable or practical to buy a breadmaker. Many years ago, I bought two on different occasions and had negative experiences with both, so returned them. A friend at work does make her own bread, however, in a breadmaker. Her sandwiches smelled delicious, so perhaps the machines have improved since I had mine. I do like the fact that they also do jams/chutneys and cakes. But is it just another gadget that needs to remain on the counter top, or it won't get used? I don't know. The bread I do buy, and then freeze or it would go mouldy, is approx £1.30 a loaf from the instore bakery, so it is fresh when bought. Batons are 75p for two, so I don't spend a lot on bread. I do love the aroma of freshly baked bread though. Don't they say if you're trying to sell a house, freshly brewed coffee and freshly baked bread can work wonders?

Thanks - I'll try and remember to get a copy of that when I next get paid. Are those rolls reasonably light and fluffy? The white loaves that I get out of mine at the moment taste fine, but they aren't the lightest in the world, and can only really be cut in doorsteps, so are no good for sandwiches.
