Pasta salads
Does anyone have some kind of recipe for a pasta salad with a tomato based dressing on it. I wanted something healthy with peppers onions cucumber etc but with some kind of dressing on it to take to work.

2 medium tomatoes, chopped
60ml cold pressed extra virgin olive oil 2 tablespoons apple cider vinegar 2 cloves garlic 1 teaspoon salt 1 teaspoon freshly milled pepper 1 teaspoon Hungarian paprika Bung in a liquidiser except olive oil. Liquidise. When its a pretty colour and all mixed,slowly add the olive oil and blend until creamy. Keeps for around 5 days. |

I actually like to use honey and mustard dressing rather than use a tomato base. Mix the pasta with rocket and cherry tomatoes, maybe some black olives too, add the dressing and you're away

A cheats pasta salad.
A carton of tortellini (which ever flavour you prefer) Some cherry tomatoes or pasta sauce etc. A bag of rocket salad Cook the tortellini. Meanwhile saute some garlic and red onion and add the tomatoes and/or tomato sauce. Finish the tortellini in the sauce. Put the salad in to a bowl and pour over the sauce. Top with parmesan, olive oil and balsamic vinegar |

I always struggle for pasta salads that don't just contain buckets of mayo. I will have to try some of these.

I always think pasta salads are a bit 1980s - but I appreciate not everyone on here is as old as me!

Pasta is way to stodgy for me at lunch time, but a nice dressing, though not tomato based, is torn basil leaves, garlic cloves, chilli flakes and rock salt all pounded together in a pestle and mortar and then diluted with olive oil. Toss hot pasta in that and you're on to a winner!
