I know I ought to remember
from previous years, but if there are only five weeks left how can all the remaining couples be eliminated to leave just three in the final? Doesn't that
mean six couples going in four weeks?

From next week, there'll be 6 weeks left and 9 couples.

Over the next 4 weeks, we'll lose one couple each week, taking us down to 5 couples.

In week 5 there will be a double elimination (assuming no-one drops out) which will leave 3 couples.

In week 6, we'll have a 3 couple final.

There are five eliminations before we get to the final (Nov 12/19/26 Dec 3/10) with the final on the 17th of December. 6 celebs leave in those presumably. Last year the semis had a double elimination, this year who knows? We might have an injury playing havoc with their options or they might even have a four people final. I don't think it is completely set in stone yet.
