My question is a two-part question.

First of all when you rip a DVD to mpeg-4 (or divx etc.) does the 5.1 information on the audio layer stay intact.

If it does then are there any media centers - I'm looking at the Pinnacle showcenter as my first choice for now - that support 5.1 playback?

Thanks in advance for your help.

Can't say for definite - but I would doubt it. It depends on what you are using to rip to mpeg4 - the only experience I have with mpeg -> divx is using Gordian knot, and that was a good couple of years ago - and generally it wouldn't preserve the ac3 track - instead transcoding to an mpeg audio format in stereo.

Generally since every meg count's with mpeg4/divx most would automatically downconvert from 'extravagant' 5.1 mixes to stereo. Have a look in your ripping program and see if there are any audio options about.
