resting chicken, too long? |

resting chicken, too long?
Got my timings all wrong doing the roast dinner today. Had to take the chicken out as it was starting to overcook, and the roasties are taking longer than I expected. Our oven is an elecrtic one with a separate grill directly above the oven so I've put the chicken in there, it gets quite hot while the main oven is on, as in I will still need oven gloves to remove it. Does this mean the chicken is technically still cooking rather than resting? Just I'd read that cooked meat should be only left 45 mins to cool before going in the fridge, and it will still be too hot to go in there if I go off 45mins from when I removed it from the oven proper. Will it still be ok to refrigerate what's left to eat cold tomorrow?

I usually just leave my chicken in the microwave and it generates a nice residual temperature from the chicken itself. I sometimes leave my chicken out for 2 hours, from oven to plate in clingfilm and I've never got sick, I then pop it in the fridge for a mid-week dinner.

I would just leave it covered with foil.
Even if it seem a little cold when coming to eat it remember that you have hot plates and hot gravy that will warm it through. |
