Fried chicken - quick question
I was going to fry a couple of chicken escalopes for supper tonight, but have realised I'm out of eggs. Can I use just milk to make the breadcrumbs stick, or will they just fall off?

Yes you can and I prefer it.
I made fried chicken last week and it was great. I brined the chicken in half water, half milk, salt & sugar. I then removed the chicken from the brine and coated it in the flour breadcrumb mixture. Another option if you have the time and the ingredient is to soak the chicken in buttermilk. |

Thanks, degsy! I've got other stuff I could do, but I really fancy some chicken tonight. I haven't got any buttermilk, but I've used it for fried chicken before - makes the chicken really tender and adds a nice acidity too.
