do the Apple shop 'replace' faulty or damaged iPhones for a standard charge of £115 or something without a receipt?

yes, if the iphone is out of warranty, or the damage is not covered by warranty then they will replace it for the £110-ish fee.
you don't need a receipt as it's done by serial number.
