Pancakes - making in advance

How far in advance can you make pancakes, and how do you store them?

We usually have our favourite leek, ham and cheese stuffed pancakees on Shrove Tuesday but are going to be late home that night. Wondered if we could make them and the filling on Sunday and just assemble them on the day.

Pancakes stored in the fridge (covered) can be stored for a week. You can even freeze them if you wish.

Put a bit of grease proof paper between them so they stay separate and you can freeze them days in advance.

I think you can as the shop bought ones last over a week unopened and then you should eat them within 2 days once opened. Use by dates always play it safe, so i'm sure 3 days would be fine.

Wrap them in foil and store them in the fridge.

thanks for the tips people.

I never like to rely on how long shop bought ones keep for as they are all sealed up and may well have preservatives etc. Ours will be all natural! I'll make sure I use the newest milk & eggs though.

Thats right. You cant compare to shop bought ones at all.

Personally I'd probably still go for making fresh as they really don't take long, especially if you have 2 pans on the go.

do you use the same flour for sweet and savoury?

in France they use a different harder flour for savoury ones (farine de ble)
