How to make a chocolate shell?

I'm making a big, truffle style concoction for a friend. It's going to have mousse in the middle so I can't just put the shell round the mouse (without freezing it first?) so how would I go about making two big half-circle chocolate shells, which I can then fill and stick together? I literally can't think of anything beyond wrapping a balloon in chocolate then popping it after the chocolate sets, but how would I know I got all the balloon out?

Fill the balloon with water. Freeze it. Use the resulting ice ball to mould the chocolate shells.
