Ricotta recipes
Sooo I'm making a ricotta and spinach ravioli with my new pasta machine Saturday, however the Tesco website was spazzing out when I did my weekly shop yesterday and instead of 1 tub of ricotta, I have 4, which need to be used in 2 weeks.
Any tried and tested ricotta recipes welcome.....

Baked Tuna & Ricotta Rigatoni
Preheat the over to 200°C. Lightly grease a large ovenproof dish with butter. Bring a large pan of salted water to the boil. Add Rigatoni, and return to the boil and cook for 8-10 minutes, or until just tender but still firm to the bite. Drain Pasta and leave until cool enough to handle. Meanwhile, mix the tuna and ricotta cheese together in a bowl to form a soft paste. Spoon the mixture into a piping bag and use to fill the rigatoni.Arrange the filled rigatoni side by side in the ovenproof dish. Now to make the sauce, mix the cream and parmesan cheese together in a bowl and season to taste with salt and pepper. Spoon the sauce over the rigatoni and top with sun-dried tomatoes arranged in a criss cross pattern. Bake in the oven for twenty minutes. Ingredients: Butter 450g Dried Rigatoni 200g Canned Tuna, Drained 225g Ricotta Cheese 125ml double cream 225g Freshly grated Parmesan Cheese 115g sun-dried tomatoes, drained and sliced Salt and Pepper. It is a fiddly dish but is really quite lovely. |
