Veggie pie ideas
Hi Folks,
I'm having a pie night next week and i'm planning on doing a steak and guiness pie, however as one of my friends is a veggie, I need an alternative. I was thinking of mushroom and leek? But some other interesting combo ideas would be much appreciated. Many thanks |

You could try a veggie crumble - like a pie but with an oat / cheesy topping instead of pastry ?

I saw a nice pastie the other day which was a butternut squash veggie curry type mix.

I made a pie that was chopped up veggie sausages, mushrooms and leeks in a bechmel sauce with a good blob of wholegrain mustard - it was lush.

Cheese and onion pie is always a winner.
Or if you want to be a bit fancier, you could have a go at Mr Ottolenghi's immense caramelised garlic tart. It's ace. |

Thanks for all your great ideas, I'll give then a think. Espresso, that tart is lovely, I made it for her last time and the non veggies were scoffing it aswell! I love ottolenghi, his restaurant at Islington is fab, not so keen on the soho one though.

You could do a sort of garden pie:

Chickpea, beetroot and tomato pie with either a pastry or mash topping.
Mushroom pie with a sweetcorn and mushroom ketchup sauce. Pizza pie with aubergine,tomatoes,olives,oregano,red peppers and mozzarella. |

I'm veggie and my favourite is the cheesy leek and potato pie from the BBC goodfood site (I'm on my phone so can't add a link, but it's easy to find on the site if you search). It's really easy to make and so yummy.

I wouldn't say no to any of the above suggestions and I'm not even a vegetarian.
