Cooking steak or roast beef?

This is something I can't get right at all, I like my steak cooked right the way through, not red, same with roast beef, I like it nice and soft and tender not chewy like rubber. I've tried everything I can think of but can't get it right.

Yesterday had a nice bit of braising steak, cooked it 8 hours in a slow cooker, still came out like rubber,

Whats the trick to getting steak or even roast beef to just crumble and fall apart?

Did you brown off your braising steak in a frying pan before you put it in the slow cooker? I always sear mine for a couple of minutes each side on an extremely hot griddle pan before I pop it in the slow cooker. It adds colour and flavour to the finished dish, and it always comes out so tender that you can cut it with a spoon.

Nope never browned it, probably should of, that may be the issue

I don't brown it first but I do find meat comes out much better from my slow cooker if I cook it on the 'high' setting, instead of the low setting.

There is no way the braising steak should come out like rubber. 8 hours in the slow cooker should have made it fall apart in strings. I did braising steak on the hob last Sunday for about 3 hours and it was so tender you could eat it with a spoon.

Sounds like it was cooked too high or the quality of the meat wasn't good.

I've never had much joy with this slow cooker, Its one of them £10 ones from Tesco's. You can make chicken soup in it, leave it on 8hrs and the vegetables still come out hard.

We had a small roast last Sunday, it was cooking 8hrs on high and the meat come out average at best, certainly not soft and tender

It was cooked on high, yeah may of been the meat, it came out of Iceland so that may be the main issue, there meat is rubbish

If the veg in chicken soup is still hard after 8 hours I would suggest the slow cooker is faulty. It would also explain tough meat. Either bin it and get a decent new one or use your oven. There is no way even the cheapest cut of meat will be rubbery after being cooked for 8 hours.

I wouldn't cook it on high for high hours. My slow cooker says to turn it down after the first couple.

Boiling braising steak will toughen it. It should simmer on the lowest heat.

It definitely sounds like a dud cooker, falko. Mine is a 1.5 litre £10 one from Wilko (and I strongly suspect manufactured by the same factory as your Teso one) and 8 hours on high would have even the cheapest cuts virtually melting into the stock.

Absolutely correct, the slow cooker is either running too hot or too cold. Maybe try it on the low setting.

Try a nice piece of fresh meat from the butchers or supermarket. Just because it is a cheap cut doesn't mean you can use any old rubbish.
