Cooking steak or roast beef?
This is something I can't get right at all, I like my steak cooked right the way through, not red, same with roast beef, I like it nice and soft and tender not chewy like rubber. I've tried everything I can think of but can't get it right.
Yesterday had a nice bit of braising steak, cooked it 8 hours in a slow cooker, still came out like rubber, Whats the trick to getting steak or even roast beef to just crumble and fall apart? |

Did you brown off your braising steak in a frying pan before you put it in the slow cooker? I always sear mine for a couple of minutes each side on an extremely hot griddle pan before I pop it in the slow cooker. It adds colour and flavour to the finished dish, and it always comes out so tender that you can cut it with a spoon.

I don't brown it first but I do find meat comes out much better from my slow cooker if I cook it on the 'high' setting, instead of the low setting.

Sounds like it was cooked too high or the quality of the meat wasn't good.

We had a small roast last Sunday, it was cooking 8hrs on high and the meat come out average at best, certainly not soft and tender |

If the veg in chicken soup is still hard after 8 hours I would suggest the slow cooker is faulty. It would also explain tough meat. Either bin it and get a decent new one or use your oven. There is no way even the cheapest cut of meat will be rubbery after being cooked for 8 hours.

Boiling braising steak will toughen it. It should simmer on the lowest heat.

It definitely sounds like a dud cooker, falko. Mine is a 1.5 litre £10 one from Wilko (and I strongly suspect manufactured by the same factory as your Teso one) and 8 hours on high would have even the cheapest cuts virtually melting into the stock.
