Secret recipies
Do you have any recipies for secret sauces/recipies? They're probably not exact but taste enough like the original to be passable Big Mac sauce The big mac sauce was simple. Mayo, thousand island dressing, sugar. I also added finely diced onion, pickle and some shredded lettuce. I don't eat out but the whopper sauce sounds nice- I'll give that a go!

I've never found a KFC southern fry quite like the fast food place. Too well a kept secret.

BBQ Baked Beans Extra Crispy Chicken Honey BBQ Wings Macaroni & Cheese Mashed Potatoes & Gravy Potato Salad Cajun Honey Wings and Chicken Pot Pie I don't know if any of them are the southern fry thing I don't really eat KFC The first 6 items can be found in Todd Wilbur's book Even More Top Secret Recipes

It was a similar taste but had a heavier batter, bigger pieces, bigger portions and cheaper price. They had a proper pressure deep fryer thing. Shame it was taken over by a rival and then closed ![]() I've seen a recipe for KFC. It was basically the whole of the spice rack

Here's the recipe for a fresh chilli sauce that we get in the takeaways in the North East. Quote:

1 stick of celery 2 shallots 1 red onion 2 jalapeno Peppers for mild, 5 for hot (not recommended!) 1 clove garlic 4 tablespoons of tomato puree 4 tablespoons of tinned chopped tomatoes (skin off) drain the juices flat leaf parsley - a small handful 1/2 fresh lemon tabasco sauce olive oil salt and pepper You need to put the celery, shallots, red onion and the Japapeno peppers in a food processor and blend until it becomes a fine paste. Put this mixture, tomato puree and chopped tomatoes in a saucepan and put on a low heat. A few minutes into cooking put 1/2 the fresh lemon juice, a few splashes of tabasco sauce and the crushed garlic clove. Leave on a low heat for 15 minutes, then add the chopped leaf parsley and a drizzle (3 tablespoons) of olive oil, few grinds of salt and pepper. Leave for at least 4 hours in a fridge before serving. Chili sauce is best served chilled. Serve alongside grilled chicken, Lamb Koftee or Other Grilled meats. Pitta bread for a side and rice and salad (tomato, cucumber and lettuce) to accompany the meats. |

Here's the recipe for a garlic sauce that we get in the takeaways in my town. It's not garlic mayo!
Basic recipe: 1 tsp garlic * 2 tsp yoghurt ** 2 tsp mayo * Pureed garlic is best. It could be a clove pureed in a pestle & mortar with a pinch of salt and sugar, which is what I find best. You can also mince it with a knife. Or you can use puree from a tube or jar. ** You can use natural or greek yoghurt, soured cream or creme fraiche. Option extras are salt and sugar, but becareful if you have used them when pureeing the garlic. You can add a dash of lemon juice. You can add some fresh mint & parsley or even a little jarred mint sauce. Use a dash of water to thin the sauce to desired consistency. The final strenght of the sauce will depend on the size and pungency of the cloves. Add more yoghurt or mayo to suit. |
