Withers - the ridge between the shoulder blades of a horse.

It's the tallest point of the body and is the place from which the animal's height is measured.

(Obscure and useless fact - singer, songwriter and guitarist Bill Withers (Ain't No Sunshine & Lovely Day) had a full-time job making toilet seats at Boeing before he became famous.)
