Slow roasted pork leftovers
Morning all,
I am going to have a fair bit of slow cooked pork leftover today, and need new inspirations of what I can do with the leftovers. Thanks

I usually spice it up a bit, shred it and have something Mexican. Tacos, burritos, fajitas or the like.

I would stir fry it with ginger and garlic, add frozen petite pois and some chopped up spring onions - mix in rice and soy sauce! I make it all the time but with ham - its really tasty

![]() Thanks for all your advice. Going the mexican route, I am going to do pullled pork and bbq sauce burgers, with mexican bean salad. I will enough more leftovers so I'll probably do a stir fry for a quick mid week dinner. |

It is usually a pork joint thats slow roasted and covered in a spice rub. Because you have cooked it so long, you can pull / shred the pork with a fork once cooked.
It's really lovely and quite versatile for many mexican delights lol |

pulled pork is gorgeous , all i do is cook the meat till it falls apart and mix a bottle of bbq sauce in and heat it up in the slow cooker , there is never any wasted ....

Last time I did it, I had chinese pancakes and made soy butter mushrooms, it was lush, I loved pulled pork!

I'd throw it into some lentil soup instead of ham and make a yummy healthy lunch.
