Best way to cook pork chops?

We've got pork chops for tea. How do you cook yours?

Salt, pepper, sage leaves, then fry (no oil needed as there's enough fat on the chops) for about 5 mins on each side, then transfer to warm plate (oooooh the juices!), while finishing off the accompaniments. Here's what I cooked a few weeks ago:

Not long prior to that, I did chops in the oven with sage and wine. It tasted nice but no golden colour and nice juices one gets from resting the chops after frying:

Make sure they are JUST cooked through....wonderfully moist.

I always thought pork chops were dry, then I cooked them myself!

Pan fried with sage leaves sounds good.
It really does taste yummy, I wouldn't want to cook pork chops without it now.

Levi Roots has an amazing caribbean pork chops recipe that I'd highly recommend, it's in his book "Caribbean Food Made Easy" and you can probably find it online somewhere, I'd imagine.

Just for the actualy cooking process I fry them in a very hot pan for a minute each side then transfer to an oven for generally 8-10 minutes - depends on thickness though.

4 large pork chops
Salt and freshly ground black pepper, to taste
1 tablespoon vegetable oil
1 can beer
½ cup sliced onions

Directions:

Season both sides of the pork chops with salt and pepper.

Heat oil in a large, heavy skillet over medium heat. Add chops and brown on both sides, 6 to 8 minutes total.

Add beer and onions and reduce heat to low. Cover and cook until chops are no longer pink and sauce is reduced, 25 to 30 minutes. Serve.

I like the taste of a plain grilled chop - with nothing added - my fave side dish with chops are french peas I think its called - I like it the way Jamie O does it - petite pois, gem lettuce and shallots - mmmmm

However since chops are a tad cheaper than other meats now - I have been researching recipes and ideas and am gonna try some - so will share at a later date

I like mine seasoned and grilled. Fat must be left on and it goes lovely and crispy. I do a gravy with the juices / cider and mustard sauce or a mushroom sauce.

I once bought some sword fish from Sainsburys. The cooking instructions said to grill for 20 minutes, each side

I told them at customer's services that they were wrong, but they weren't interested. I pan fried it for two minutes each side, and it was just right.

Tenderised, then under the grill until the fat goes crispy, served with buttered peas and creamy mash, then I pour the juices out the grill pan onto the mash, mmmmmmmm.

Depends on the size and quality of the chops. Seeing as though they are being slowly braised they may turn out lovey moist and tender.

Depends on the size and quality of the chops. Seeing as though they are being slowly braised they may turn out lovey moist and tender.
The chops will already be cooked after 8 minutes in the pan, give them another 30 minutes, even braised and they will be over cooked. All in my opinion, of course.
