leftover lamb

Have got leftover lamb from yesterday's roast dinner - it was slow roasted for several hours so was very tender.

Was thinking of doing a shepherds pie but have only ever done it with mince, rather than cold meat - can anyone suggest how I can do it - I usually add tinned tomatoes, onions and a Colman's recipe mix

Make it the same but add the lamb later on as it is already cooked.
e.g. sweat the veg, add the seasoning, add the tomatoes/stock and cook out/reduce.

thanks degsy, thats how my OH is doing it. I normally cook but am not allowed to sit in my wheelchair at moment so am shouting instructions from the bedroom

I'm starving so hope it tastes as good as it smells

I say on a sarnie with some good butter! Especially good if the lamb has been slow cooked with a garlic and rosemary butter!

it will taste better with cold lamb, than mince.

nice with a crumble topping, too

I used my leftover lamb in a North African jewelled cous cous dish last night and it was very nice indeed.
