If I've spent a day cooking I usually just use the leftover beef in sandwiches (toms and a good horseradish mmm!) or a salad the next day. I suppose it depends how much you have left. A stirfry can make a little go a long way.
Agree with earthling; or mince it and make a cottage pie if there's enough. I have a childhood memory of my Mum mincing the left-overs of the Sunday roast on Mondays and making pies / burgers / rissoles.
Or you could make toad in the hole. I believe that originally this was made using chunks of meat left over from the roast, rather than sausages. You could revive the tradition!
Depends on how much leftovers you have.
If you have plenty then you could make a cottage pie.
If you don't have that much then a stew.
Or maybe pies or pasties.
