Suggestions for a nice, tasty traybake would be appreciated. something not complicated or time consuming so if someone rings to say they're calling, I can have it ready within the hour. I was thinking of something sweet, but I suppose savoury would be good too.

I did Nigella's Spanish chicken with chorizo and potatoes the other nght and it was lovely, the addition of orange zest really works

I've booked marked that, sounds yummy!
There's always the sponge with jam topping sprinkled with coconut if you've not got many ingredients in the store cupboard. Then a tray bake of Manchester tart - sweet short crust with a layer of jam then custard - when set sprinkle with coconut & slice as required.
If a savoury one is required - when my three children were on school holidays I'd make a pasty tray bake ( you can get veg in without them knowing too) then I'd slice it and they could eat it as picnic food ( we used to have summer then).
For a veggie tray bake you could make a quiche type with peppers, courgettes, red onions, cheese, tomatoes, baby spinach etc.

I do a few different variations of traybakes depending on what I've got in my veg box! Popular one is roast off veg (potatoes, peppers, courgette, aubergine, onion, leek, squash, tomatoes, herbs, garlic, olive oil) then top with piece of fish or chicken, sometime smothered in harissa yum yum

I love that recipe, and cook it often. The orange zest seems weird but, as you say, it works really well.
