Summer pudding
Victoria Sponge
19-04-2012
Ive seen this thing demonstrated on tv cooking shows over the years. Whilst the end product looks attractive enough, the fact that is made of bread, resulting in soggy, juicy bread, really doesn't seem so appealing to me. In fact, I imagine it to taste disgusting!

Summer pudding, for those not in the know, is mixed summer berries cooked in sugar, then placed into a mould lined with stale white bread, then chilled, allowing the juices to seep through the bread.

Am I missing something though? Does it, in actual fact, taste nice, or at least a lot nicer that it sounds, given the combination ingredients?

Have you prepared/and/or eaten summer pudding? If so, what did you think of it?

Summer pudding is lovely with some cream poured over it. The juices soak into the bread which makes it soggy and as long as you have the right amount of sugar (too little and it can be a bit sharp) it's a nice pudding to have when it's hot.

But does the bread taste like...bread? The fruity bit sounds fine to me, it's added bread combo that I find difficult getting my head round!

I've actually never eaten it before, but I've had exactly the same thoughts as you!

I can't really imagine how it would even taste that nice, let alone as amazing as some chefs would try to make me believe.

It soaks up the juices from the fruits and if left long enough it goes really soggy and just tastes like soggy fruity bread. It's hard to describe because it is nicer than it sounds.

Summer pudding is one of the nicest puddings to have in the summer with plenty of fresh cream

As far as the bread is concerned, I don't really notice it tbh as the intense flavour from the berries is so overwhelming.

Its well worth doing

Ellie and cOOkie said it's nice. Ok de Winter, can you try it first and let me know, then I might try it.

But wouldn't it be even nicer made with madeira cake or even trifle sponges?

Victoria, I'm up for giving it a go. Will do so this weekend and report back!

I made it only once and used Brioche slices. Lovely it was too.

See, if it was made with cakes, then it wouldn't be an issue, BUT de Winter, no cheating, you have to use STALE BREAD as the recipes specify, ok?

BTW, Some photographic evidence will earn you bonus points!

As if I'd cheat! I want to know what the real thing tastes like... I just can't imagine it'll be that nice.

I don't have a proper pudding bowl so my summer pudding will probably by Pyrex jug-shaped

I agree with OP re. the soggy bread but on the other hand I love mopping up the gravy left after liver and bacon and mash. So what do I know?

My family love summer pudding but the texture of the soggy bread makes me gag. I don't do soaked things like that - trifle is like my worst nightmare, especially if it involves cold custard.

I love summer pudding... It's my favourite dessert. I've never considered making it with stale bread though. We make our own bread but I buy a loaf of value white sliced for the sake of the pudding. Seriously it is lovely. I can't really see the problem cos most people would eat bread and jam or fruit pies and both are a similar concept. Try it and see!
