I made my own marinade for chicken-too much ingredients in the marinade?

Right now I have some chicken pieces marinading.
I made it using:
chicken oxo (2 of them)
piri piri premade thing by swartzkoff (spelling not sure of)
olive oil
honey
salt
pepper
soy sauce
tom puree
finely sliced garlic
shredded ginger.


Does this sound ok to you people? Or have I overdone the tastes. I tend to but a jar and marinade this way, but felt vreative this morning.

Sounds good to me, all those flavours should work very well together. If it was me I wouldn't bother with the stock cubes or tomato puree I suppose. Don't worry though, it might taste amazing, if not at least you've learnt what to leave out next time. At least you had a go, a lot of people wouldn't, well done and let us know how it turns out!

Does the premade mix have chilli in it? You need some heat for piri piri.

Well I loved it, but my son said it was too hot.
I think there was a little too much piri piri mix in, but will certainly make it as similiar as I can next time. This was the piri mix I used- definately recommend it. Used about 6 tea spoons

I'd leave out the salt and the Oxo cubes and the tomato puree and substitute dried crushed chillis for the piri-piri mix.
