Cooking eye of silverside

I have a nice bit of beef to cook for dinner later, I got it from friends who rear their own beef and it comes from a dexter cow.

What is the best way for me to cook this, I want it to still be a bit pink in the middle and hopefully not too tough! Any suggestions?

Make sure it is room temp.
Season it and sear in a spanking hot pan.
transfer to preheated oven.

Cook until cooked to preferred doneness.
Either check the cooking times & temps for the size of your cut on the net or use a digital thermometer.

its just resting now while I cook the veg - smells and looks yum - hope it tastes as good
