Searing meat?

I consider myself an okay cook, but I've never seared a joint of meat before cooking and to be completely honest never understood why I need to.

Why do we need to sear our meat before roasting ?

Some cooks argue that if you seal the meat at the beginning of the cooking time, it seals in the flavour. HFW doesn't think this is necessarily true, but still advocates what he calls the sizzle. His book on meat is excellent.

Basically you do it to colour and bring out flavour in the meat. It's optional.
