Pasta dishes and quick meals
We always cook from scratch so I'm looking for some new ideas for things to add to a pot of pasta to make a quick meal or for quick simple meals, we already do a sweet chilli chicken one, and a tomato/pepperoni pasta. We'll be off in the caravan quite a lot so ideas that dont involve loads of ingredients and lots of effort would be great.

Pasta, mixed with creme fraiche, pesto and chicken, topped with pine nuts.

sausages - your favourite type, cooked and sliced, or even Mattesons smoked at a push, added to tomato sauce

My favourite quick pasta dish, that I'm having tonight....
Good sausages, your favourite kind, removed from their skins and made into little meatballs. You can also use cocktail sausages whole or just slice up normal ones instead of the meatballs, if you're really in a hurry. Tub of creme fraiche, enough wholegrain mustard to taste (usually a good couple of tablespoons in our house, but depends how mustardy you like it), season, toss with pasta, good job! And so quick...often takes as long as the pasta takes to boil. |

My favourite pasta dish - Mushroom and Tarragon Pasta
Fry off some mushrooms, onions (optional) and garlic. Add dried tarragon (I use quite a bit - about 2 tsps, as I like it strong). Add a heaped tsp of marmite and a pot of soured cream and mix. Add to any type of pasta. You can add cooked chicken to this too if you fancy some meat! Delicious and very filling

mmm these sounds pretty good, thanks guys! Pasta is our staple when we're away but we really need fresh flavours. The favourite in our house is thinly sliced onion and red pepper fried in olive oil until soft, add 1/2 tin of chopped tomatoes and gently simmer for a further 10 mins or so, then add around 100mls of sweet chilli sauce and 3-4 good dollops of creme fraiche. Add the cooked pasta to the mix and you're good to go.

Add extra flavour by making confit garlic in olive oil with basil. To make it even easier just buy a bottle of passata. I use ASDA Extra Special passata. There are two. The smooth and the rustico. Make it into a puttanesca with capers, anchoives and some decent tuna fillets. |

I like mustard in the sauce, that's my marmite !! Either well smoked bacon and tomato or lots of peppers go well in the topping. Italian food tends to be very simple, a handful of ingredients and you have such a good dish. Find your favourites and enjoy !!

My favourite thing with pasta at the moment is bacon lardons, mushrooms and chillies. Nice mixed with garlic & herb cheese, but also nice without.
