You have to "own the space".

Be brisk and decisive and don't be at all tentative or nervous.
Choose an operating surface! We have a chest of drawers which is a bit higher than tabletop or worktop height. Put down a bit of carpet or something non-skid if you don't want the cat to start skating and skidding.
Have the tablet to hand and prepare a post-tablet treat (a bit of fish, meat, whatever... though I wouldn't recommend chocolate or crisps!) then approach cat and place on the operating surface.
One of you "scruffs" him / her firmly (but gently) while the other opens mouth as wide as possible. Put the pill as far down the throat as possible. Close mouth and rub cat's throat. This makes it swallow. Release mouth (but not cat) to check that the tablet isn't going to be regurgitated. Release cat and stand back. Offer treat... probably to the cat's tail as it legs it off the table.
It should all take about 10 - 15 seconds, the cat is unlikely to bear a grudge and this method works even if you have a course of antibiotics or something to administer over a period of days.
The "scruffing" - holding them (not dangling them) by the scruff of the neck is what their mothers would do to discipline / move them so cats are predisposed to be more docile when held like this.
