Chicken in white wine with pancetta recipe

Just experimented today with a recipe and I was so delighted with the result I wanted to share it with you. I'd really love it if someone could give it a try and let me know what you think.

I love making home made wine for beef bourginon but wondered if this could be replicated with white wine and chicken. Any medium wine will do but it's cheaper if you make your own.

I put 3/4 of a bottle of white wine in a pan and added 1 pint of chicken stock, 1 pack of smoked pancetta, one whole diced white onion, 2 sliced celery sticks and 5 white sliced mushrooms. Then add one tsp of taragon, one tsp of thyme and black pepper.

I boiled it up until the onions, celery and herbs softened then simmered it for an hour. Then I added the diced chicken, 100g approx of creme fraiche, 1tsp of garlic puree and thickened with flour to desired thickness. Cooked it out for a further 20 minutes until the sauce turns a beige colour then serve.

I served it with pasta but I think it would go perfect with dauphenoise potatoes and green beans.

You don't need to add salt because the pancetta makes it quite salty already. Enjoy with an ice cold Chardonay. Bon Appetit!
