Vegetarian starter

Does anyone know of any top vegetarian starters which use mushrooms ? I'm cooking for a friend whose vege and trying to do something really yummy !! Any ideas welcome

The ideal thing would be to serve some wild mushrooms, but chances are you can't get any.

Tricky one. There are countless mushroom soups which can make a good starter. Lots of mushroom pate type things you could serve with bruscetta or some other fancy bread like bilinis... and then you have all the various stuffed mushroom dishes.

Failing that you could do a fresh mushroom salad, mushrooms a la Greque...garlic mushrooms.

Ohh a perfect thing would be mushroom kievs, but they are quite tricky so I'd be worried I might mess up your meal.

Wild mushroom risotto.

This is absolutely delicious and quite easy (I leave out the Pancetta.)

Thanks for the recipe's everyone, some lovely dishes. I'm thinking of giving mushroom pate a go. I've got a few weeks ahead of me, so I think I will do a dry run. So wish me luck as I experiment on my family first !!!!

Mushrooms are a bit predictable, how about some gnocchi with roast butternut squash and cider glaze, or make something with beetroot or asparagus which is now in season!

Mushroom's are a favourite of my friend's so I thought I'd give it a try. Maybe something more ambitious next time, thanks for the ideas !! Previously I've cooked a roasted butternut squash and lime soup which was excellent

Creamy mushrooms a la Las Iguanas.....mmmm serve them topped with rocket and four tortillas on the side.

diced Field mushrooms and finely chopped garlic fried in salted butter until soft and browned. Tkae off heat and stir in a tablespoon of double cream or creme fraiche and a heap of chopped parsley plus a squeeze of lemon. Serve on a wedge of sourdough or ciabatta toast

Fill ramekins, top with cheese (I'd use parmesan myself, but for a vegetarian, you'd need to adapt - Sainsbury's do a basics 'italian hard cheese', which is basically a vegetarian parmesan), oven bake until the top is golden and serve with fresh bread or warm crudites.

Alternatively, top some toasted ciabatta with the creamy mushrooms and serve as a bruscetta.

Make a little open puffed pastry square - like a vol au vent, and top with your fave creamy mushroom sauce. size depends on your appetite
