Mirror's Edge definitely, one of the most underated games of this gen. Enslaved too deserves a sequel but that ain't gonna happen after it undeservedly bombed.

For a third i would want
- a longer story with more missions, as long as in doesn't intrude on your ability to do whatever you want
- a more varied amount of side quests and challenges, with addition cutscene giving more background of the side quests
- more to do overall, like i said it is amazing to just destroy stuff for hours and explore but extra varity could be nice, maybe a casino area to play games in etc
- A fast travel system

That's basically all it needs and it would be fantastic in my opinion
The bit in bold contradicts your first paragraph, imo. Not needed imo, using the slingshot to get around was perfect, and if you felt like it you could use a vehicle. Discovery was one of it's main charms.

JC3 just needs more destructible buildings, not just the ones with logos on them. A reward/punish system could be implemented to stop you from destroying friendly buildings. Though JC2 had no problem with you flying a commercial jet into the ground.

Oh i should of been clearer i meant just for getting to story missions, while its amazing travelling round doing whatever like i've said, it's also pretty annoying when you get killed and its 20+ minutes to the mission start and there is no way to fly

One of the things I would change for JC3 would be no annoying timed missions like the bomb one in the second game.

Red Dead Redemption, as the game was so fantastic. An eventual sequel or prequel would be amazing if done right.

Bully, or Canis Canem Edit as it was renamed. Fantastic game, and I hope it gets a sequel in the end.

Destroy All Humans... loved the first two, and then the third one by a different production house sucked. I'd love it to be remade.

Ratchet and Clank, though I think we sort of have a PS2 trilogy and a PS3 trilogy already. Maybe wait for PS4 for this one.

Jak and Daxter... such a fantastic series, with such a vast universe in it - surely worthy of more than just the three main games we got.

Tekken 7 - if only so I can get over the hatred I sort of have for Tekken 6. I'm looking forward to Tag 2.

Batman: Arkham City. Both of these were awesome, and I think a third without the Joker would give other characters a little time to shine. The second game was filled with hints of things to come that have yet to happen as well...

Shenmue 3 (and 4)
Would be happy if they made it using the original engine, given that would be much cheaper to do. A spin-off game where you play as Ren would be fun, too.

Fighters Megamix 2
With Team Ninja saying AM2 can use the DOA characters, the line-up of FM2 could be awesome. Imagine the Daytona car in the ring with today's graphics.

Space Channel 5 Part 3
Ulala was born to dance on Kinect!

LA Noire, I feel like the ending of that game was sort of anti-climatic. It definitely deserves a sequel, but it needs to have more to do.
