I loved Ed Burne's comment about the pompous car bloke having a broken neon sign outside his business.
The man in the railway station restaurant was way up his own backside too. Jade and Nick struggled with the calculator. It was unfortunate.
But why was the man so rude to them and intollerant about it? Because that arrogant big head knew he was on a TV programme.

He was right to be annoyed. If someone comes to a business meeting and is poorly prepared and fluffs their figures it is annoying. Time is money and people are busy.

True, in a real situation.
But he knew it was a TV programme and that the thing was set up. There was no need for his "intelligence" comment towards Nick and Jade.

It was a real situation. TV show or not. He needs to know what the deal is. They were poorly prepared and he was right.

It was all part of 'the scene' and it's no more than Gordon Ramsay does. By the way, the 'arrogant big head' is Marcus Wareing, who is quite a big name in the restaurant world. He used to be the head chef at the Savoy Grill. He's also the head chef at a restaurant (not the one seen in the programme, which is his new place, The Gilbert Scott) which was voted London's Best Restaurant ahead of Restaurant Gordon Ramsay by food bible Harden's. Indeed he is a protege of Ramsay's - Gordon was best man at his wedding. (Oh, the wonders of Wikipedia ...)
