The outside leaves etc of cauliflower

You know the outside leaves etc of a cauliflower ?
Are these edible ? Can you treat them as another vegetable ?
If so, why do we throw them in the bin ?

I always wash & use them, waste not want not etc - so long as they are in good nick.

Hard to get them these days as the shops always cut them off but they are perfectly edible and quite delicious, just treat them the same as cabbage.

Some goes for leeks, all the dark green leaves are cut off. And that's where most of the vitamins and minerals are concentrated. Excellent for soups and stews.

Dont use cauliflowers much, but I always use Broccolli leaves and try and choose those that are leafy.

I also slice the outsides of the stalks where they are tough and eat the white flesh inside. Its got a lovely fresh nutty flavour.

I love raw cauli stalk- so crunchy- but it gives me the worst heartburn!

I use the smaller leaves though in soup.

The outside leaves are good in a stir fry, quite similar to other types of greens which the Chinese use.

I always cook and eat all the outer leaves and stems when I cook cauliflower~it has a wonderful delicate flavour.

I steam a whole cauliflower almost everyday when I can~
I enjoy the whole thing....I love it in a chinese type gravy

After the Cauliflower is tender ~I then add the gravy ingredients
and let it all cook and coat the veg for a few minutes
~by adding
a Tblspn -ful of veg /or onion gravy granules
with /spring onions / 6 slices of finely sliced ginger/ sesame oil / soy sauce/ drizzle of honey / a good squeeze lemon juice and the skin rind /s&p/ and a small amount of water as required to make it into a gravy
