Fish filleting knife

I love fish recently bought a fabulous fish cook book which tells you how to prepare whole fish etc. I've tried to find a filleting knife buy just cannot find one anywhere! Any ideas?

I haven't seen one in the shops for a long time, though I haven't tried any specialist shops. There are plenty on the internet of course but I'd like to see just how flexible the blade is before buying.

Though I'd only really use one about once a month and I seem to manage with an old cheap flexible knife which I've had for decades.

The top two results in the amazon link are by Salter which is a pretty well known brand and The Knife Sharpening Company which sells industry standard blades (e.g. those for catering companies/schools, restaurants, butchers, fishmongers etc) so will probably pretty good.
And both less than £15.
Plus you can always send them back.

Dammit I seem to have ordered a Salter one using one-click. My knife drawer is already overflowing.

I suppose it will be useful for chicken etc. as well.

Got my Salter fillet knife today. Seems a quality bit of kit, German high carbon steel which bends quite nicely really. Good handle. I reckon it will be a useful addition to my knife drawer.

Not got a chicken or fish to try it out with though.
