Fish filleting knife
I love fish recently bought a fabulous fish cook book which tells you how to prepare whole fish etc. I've tried to find a filleting knife buy just cannot find one anywhere! Any ideas?

I haven't seen one in the shops for a long time, though I haven't tried any specialist shops. There are plenty on the internet of course but I'd like to see just how flexible the blade is before buying.
Though I'd only really use one about once a month and I seem to manage with an old cheap flexible knife which I've had for decades. |

Got my Salter fillet knife today. Seems a quality bit of kit, German high carbon steel which bends quite nicely really. Good handle. I reckon it will be a useful addition to my knife drawer.
Not got a chicken or fish to try it out with though.
